Stuffed Capsicum


Capsicum: 4
Boiled and mashed potato: 2
Boiled & mashed peas: 1 cup
Onions: 1
Ginger: 1 inch 
Coriander: a few springs
Chilli powder: 1/2 tsp
Turmeric powder: 1/4 tsp
Garam Masala : 1/4 tsp
Cashew Nuts: 2 tbsp
Cheese: 1/2 cup
Oil: for frying
Salt: to taste

Slice off the top of the capsicum and remove seeds. Slice thinly from bottom so they can stand on a baking tray. 
Mix together potatoes, peas, chilli pwdr, turmeric pwdr, garam masala, cashew nuts & salt. Keep aside.
Preheat oven to 225 C
Heat a little oil and fry onions till translucent and add ginger. Add the potato mixture and cook for 2 minutes.
Stuff the capsicum with above mixture. Sprinkle cheese. Place on baking tray and bake at 225 C for 15 mins.
