Lemon juice : 1 tbsp
Honey : 1 tbsp
Cashew nut : 1/2 cup
Sugar : 1/2 cup
Coconut : 1/2 cup (grated)
In a food processor, blend all ingredients except the coconut.
Once the mixture forms a lump, remove and roll into a single log of 1.5 inch diameter. Roll this log in the coconut.
Wrap is foil and refrigerate for 24 hours. Slice and serve.
