Lemon Bars

For Crust:
Butter - 1/2 cup
Icing sugar - 1/4 cup
All purpose flour - 1 cup
Salt - 1/4 tsp

Lemon filling:
Eggs - 2
Sugar - 1 cup
Lemon zest - 1 tbsp
Lemon juice - 1/4 cup
All purpose flour - 2 tbsp

Preheat oven to 170 C.

For the crust, cream together the butter and icing sugar. Add flour and salt and mix well.
Transfer into greased square baking dish. Press till it is packed firm and even.
Bake for 20 mins till it is golden colour.

For the filling, whip the eggs. Add lemon zest, lemon juice, sugar and flour and blend well.
Now, pour this mixture over the baked crust. Return into oven for another 20 mins.

When baked, let it cool and then dust icing sugar. Cut into squares and serve.
