For Rice:
Basmati Rice : 3 cups
Coconut Milk : 3 cups
Water: 2.5 cups
Garlic : 1/4 tsp
Ginger : 1/2 inch
Bay leaf : 1
Salt : to taste
For Sauce:
Onion : 1 medium
Garlic : 3 cloves
Red Chili paste : 2 tsp
Shrimps : 1/2 kg packet
Oil : 2 tbsp
Sugar : 1 tbsp
Tamrind juice : 1/4 cup
In a saucepan, cook the rice in coconut milk, water, garlic, ginger and bay leaf. About 20 - 30 mins over low flame.
For the sauce, heat oil, stir in onions, garlic and cook until fragrant. Mix in the chilli paste and cook for 10 mins. Add the shrimps and cook for 5 mins. Stir in salt, sugar and tamrind juice and cook for 5 mins or until sauce is thick.
Serve the rice hot with sauce over it. Garnish with few fried peanuts and boiled egg.
