Baking powder - 1 1/4 tsp
Baking soda - 1/2 tsp
Salt - 1/8 tsp
Eggs - 2
Sugar - 3/4 cup
Vanilla essence - 11/2 tsp
Vegetable oil - 1/2 cup
Buttermilk - 1/2 cup
Preheat oven to 180C.
Sift together all the dry ingredients and keep
aside.
In a bowl, beat the eggs till light and fluffy. Add
the sugar, vanilla and oil.
Lower the mixer speed and add buttermilk and the
flour and beat until just combined.
Pour batter into muffin tins with paper liners.
Bake for 12 - 15 mins.
Remove from oven and cool completely and serve.
