Macaroons


Egg whites - 4 eggs
Powdered sugar - 1 cup
Vanilla essence - 1 tsp
Ground cashew - 1 cup

Preheat oven to 180 C.

In a bowl, add egg whites and beat them till fluffy and soft peaks are formed.
Gradually add the sugar and continue beating the mixture till stiff peaks are formed.
Invert the bowl and the mixture should not fall off.
Now, fold in the cashew powder and vanilla gently.
Put the mixture into a piping bag and pipe out small truffle sized balls onto a greased baking tray.
Reduce the oven temperature to 160 C and bake for 15 - 20 mins.
Allow to cool and harden.
