Raw Mango in Coconut Milk Curry
Raw Mango - 1 (peeled and sliced into thin strips)
Turmeric powder - 1/2 tsp
Chilly powder - 1/2 tsp
Green Chillies - 2
Ginger - 1/2 inch
Thick Coconut milk - 1 cup
Mustard seeds - 1 tsp
Curry leaves - 10
Oil - 1 tsp
Boil the mango slices, turmeric, green chillies,
red chilly powder, ginger in a small amount of water. (Just enough to cover the
mango pieces)
Once the mango is cooked, reduce flame and add
coconut milk.
In another pan, add oil, splutter mustard seeds and
curry leaves.
Add this into the mango curry and stir well and
take the curry off the heat.
Serve hot with rice.
(If the mango is very sour, slice and leave in
salted water for an hour before use.)
