Papdi
Wheat flour - 1 cup
Vegetable Oil - 2 1/2 tbsp.
Ajwain seeds - 1 tsp
Salt - to taste
Preheat oven to 200C.
Mix all ingredients and make the dough by adding water. Roll out into small circles.
Poke with fork. Bake till golden brown.
Remove and they will continue to crisp.
Sev
Besan - 1 cup
Turmeric powder - 1/4 tsp
Lemon juice - 2 tsp
Asafoeitida - 1/2 tsp
Salt - to taste
Combine all ingredients and make dough.
Fill the dough into a sev press and press into greased baking tray.
Make at 200C for 7 - 10 mins.
Take out and crumble to make sev.
Papdi and Sev can be used to make a variety of chat dishes.
Store in air tight containers
