Onions (sliced) - 1 big
Besan - 1/4 cup
Oil - to saute
Dry Ingredients:
Amchur powder - 1 tsp
Fennel powder - 1/2 tsp
Chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Garam masala - 1/ 2 tsp
Cumin powder - 1 tsp
Coriander powder - 1 tsp
Salt - to taste
Wash and dry the bhindi. Make slits on the side
(3/4 the length). Stuff the slits with the dry ingredient mixture. Add one tbsp
oil and coat all the bhindi. Keep aside.
Heat oil in a pan. Add cumin seeds and when it
splutters, add onion and fry till transluscent.
Add besan and stir till the oil leaves the the
surface of pan. Add the bhindi and stir till the besan mixture coats it
completely.
Cook on low heat, stirring occasionally till the
bhindi is cooked and crisp.
